I made the most greatest supper but….but….the chicken was a bit dry. Since I didn’t coat it with anything and I wanted to bake it with my veggies it got a bit dry. Not terrible mind you but enough that Mike used ketchup on it. It looked so yummy, tasted so good …but dry. Any ideas? Here’s what it looked like.
First I grilled it in my cast iron grill pan for about 8 minutes and I did use some water to steam it a bit. Then I added the green pepper, onion, 2 small red potatoes and tomatoes and baked it at 450* for 30 minutes. The veggies were perfect. Just the meat. I can handle it, in fact it’s what’s for lunch today.
It’s January and of course money is tight, I am thinking about eating these guys…
They are good for you, very low fat and when roasted on the dinner spinner are amazing. What do you think? Like squirrel? There isn’t a meat I haven’t eaten in my life growing up on a farm but now that I’m older these guys get to live, I’m just kidding but they do taste like rabbit a bit and that is what I’m fixing tomorrow. Remember this..Best Dinner Ever! Terri gave me 2 rabbits that are dressed for cooking so I am going to be baking them up.
Gotta have my meat so that means finding the best way to cook them. I know, meat isn’t for everyone and meat with faces isn’t for Allan at all. I’m just not an ocean animal eater, the shrimp is good but otherwise that’s about it. So I’m learning to fix the old traditional stuff better.

I think if u had used a light marinade in the chicken it wouldn't have been dry.. olive oil and lemon juice.. some chopped garlic, fresh herbs...

Brining works on Chicken breasts also, just like Turkey.
I agree that marinating the chicken before hand may make it more moist... but I am no experct. The dish looks so yummy!
Amazing to think about eating a squirrel. However would you catch one? I love getting my meat/protein in. I use chicken, turkey or fish - but I also use Morning Star veggie burger products and cottage cheese. My hubs in not a big meat lover so I sometimes have to be creative.

You could add a couple tbsp of peach or orange marmalade. They have low sugar kind that tastes good. Ginger is good with orange. Or even just some teriyaki sauce or soy sauce would help. Salsa? Enchilda sauce? Lots of things you could do for very low calories.
I'm with you, I can do shrimp but that's about it for the fish family. And I like my shrimp BREADED which isn't too diet friendly! :-)

My suggestion would be to heat your cast iron on high, then just sear the meat on either side (so like its still raw in the middle). It will cook through during the 30 minute baking time :D

Yeah I find if I cook the chicken on low and really keep an eye on it then it doesn't dry out, but if I even overcook it a fraction it is tough to swallow. And I think slow cooking helps, and always covered, too...but sure does look yummy anyway!!

Well, me, I HATE squirrels! So, go ahead and stew them up. I am serious: I hate them! Rats with tails that's all they are to me.
I have eaten rabbit - they eat lots of rabbit in Northern Italy. Kinda grosses me out but tasted pretty good if I don't think about it too much. And don't go eating your squirrels...
Oh, I just asked my husband to read the cyrillic comment - he says that it is in Russian and it starts off with "Thank you for the information...blah blah blah" and then goes on to discuss a taxi service in Moscow. LOL!!!!!
