Cooking with no clue…and the results are in…

Okay, wraps…I haven’t a clue what they were, never really knew because I don’t like soft taco shells so never took the time to look or even figure things out but….with trying to learn to eat a bit more healthy I made some enchiladas. Most of the ingredients I used were good for you, not the cheese but hey I’m pretty new at this. I of course didn’t use a recipe, just what looked good together. So here’s what I did…

I took these…plus pepper jack cheese…the green container is my green salsa.

and made this…

A layer of green salsa and cheese

Cooked chicken with the skin removed in olive oil, seasoned pepper, seasoned salt and garlic….

Cheese on the bottom, seasoned rice and chicken mixture…

All rolled up in a healthy wheat tortilla…

Topped with more green salsa and cheese…

Baked at 350* for 40 minutes.

Here’s what’s left. It really was good. I mean really.

I know it’s not the most healthiest because of the cheese but the rest of the ingredients were good. Well I’m trying.

I have my weight……Drum roll please…..197!!! Just maybe I’m done being stuck at 199 3/4 and can get to work. I measured myself too, even though the weight didn’t change I lost another 7” of fat. Nothing again from my middle but the rest of me is improving. So it’s onward and upwards to 195, to a size 16 that’s comfortable, to a better me, a healthier me.

So a new week, a new adventure. In less then 12 days is our 5K walk competition. I’m excited and not in the least bit worried. I’m doing it, it is my first and it won’t be my last. I’ll just do my best and let the Lord do the rest. Time to walk a bit harder, stretch a bit more and work on some crunches to trim the middle.

I don't know if you follow Chris at A Deliberate Life or not, but one of the things that she said about her own weight loss journey that has stuck with me is this: focus hard on doing what you are good at. If it is exercise. Do that. Meaning if you know that is one area you won't fall down, be really strict with yourself there. If it is counting the calories, do that. Eventually, you will have to get all areas under control. But get really good at one thing first. Then really good at another thing. Eventually, it will all come together like a well oiled machine. You will have a well executed plan in place. Sometimes it feels overwhelming if everything is a struggle. I say this not really knowing where you are in your journey. So, if you already know all this, consider it a reminder from someone well-meaning.

Julie... that looks SO good... I want to come over and eat dinner with ya'll!! And for your first time.. there is nothing you can't do girl!

Big Congrats on your loss - Woo Hoo! I'm sure you'll do terrific on your 5k walk. I did one with my family back in July and it felt SO good. I can't wait to actually RUN a 5k. But that is a ways ahead of me.

Yay Julie! Congratulations! and those look super yummy. I'm a total cheese addict so of course I'm drooling over here! I'm not a huge wrap person but i tend to eat more wraps than I do bread.

Excellent on the enchiladas! We eat everything on a tortilla!! I am the wrap queen! It's our go-to meal. These look good, you did good.

Wow, good for you on the weight loss! And those enchiladas sound incredible. Enchiladas are my favorite food of all time! You just can't beat a cheesey Mexican casserole. mmmm. I'm excited for you in the 5K--take pics for us!

Sounds yummy to me, I love enchiladas! I think it is great when you can just throw together a healthy and satisfying meal. Congrats on the weight loss!

We've been walking at night for the last 10 days and I went to the mall yesterday and could tell such a difference. We aren't up to your level of a 5K yet, we are only at 2 miles but each few days add distance. When we started I couldn't do a mile without my ankle hurting and really wearing out. Congratulations to you!
